100% hand-harvested Chardonnay from 40 year old vines planted on chalky soil. The vineyards are located in Oger and Le Mesnil-sur-Oger, and the grapes come from the top of the hills. The fermentation takes place in thermo-regulated stainless steel vats, including the malolactic fermentation. Dosage: 3g/liter. Aged for 6 to 7 years on the lees before release.
