Made in almost the exact same method of half fresh and half dried grapes, aged ripasso style just like the Valpolicella, however this is a single vineyard field blend of the 3 traditional grapes plus Cabernet Sauvignon and Franc, Nebbiolo, Croatina and for fun a little Sangiovese too. The only single-vineyard bottling at Quintarelli, Cà del Merlo takes its name from the hill that rises beside the family house and is loaded with powerful flavors of blackcurrant, mint, sage, lilac, and exotic spices.
