3-Michelin starred SingleThread Restaurant Wine Director Chris McFall and Wine Shop Manager Julien Tremblay share their philosophy about our wine selection and offering.

About Chris

Originally from Austin, in 2012, Chris was named ‘Best New Sommelier’ by Wine and Spirits Magazine, an industry peer-based poll.  Continuing his thirst for knowledge with a wanderlust spirit, Chris took an opportunity to join the wine team at Pappas Bros. Steakhouse, a Grand Award winning program inHouston, Texas. 

Additionally, he managed and developed award winning programs at the 2 Michelin Starred Lazy Bear in San Francisco.  In Spring of 2020, Chris joined the Sommelier team at SingleThread, quickly taking on the role of Head Sommelier and in September 2022, Wine Director. 

About Julien

Julien found his passion for hospitality and beverage where he grew up in Vermont. Wine became the best medium to connect to people from all walks of life and he soon found himself on an adventure to the West Coast pursuing this passion. After a brief time working at a California-exclusive wine bar, he and his wife found themselves packing their bags for a new adventure in Sonoma.After working a harvest and vineyard surveying for North Coast Wine Co. in 2018 he worked a number of hospitality-fueled positions at Coursey Graves Winery, Arista, and Lambert Bridge before joining the SingleThread team in 2022. 

About SingleThread Wine Program

Chris is proud of the large offering of Sonoma County wines in the Wine Shop. “It’s a privilege to work with Sonoma wineries. Our wine list, which is 158 pages and growing, shines a lot of light on Sonoma County producers, specifically those near and dear to us and who stuck with us since the beginning of
the program.”

Julien shares, “We have over 300 unique wines online right now, and that's only growing. And so, each week, we highlight producers we're excited about, wines that are right here in our backyard in Sonoma or from the far reaches of Italy. So, it's fun to give those producers spotlights they may not have otherwise, and we talk about why we're excited about them and where they fit in the wine world.“

Two specialized subscriptions are on offer at SingleThread Wine: Champagne and Saké. “With the monthly Champagne Subscription, we hand-pick old-guard staples or something new, fresh, and exciting that leads to curiosity about the program and allows us to bring some cool bubbles to people's living rooms.The quarterly Saké Subscription puts together something special that ties in with the Japanese-inspired menu we have here while showcasing incredible and unique sakés”
