Hugues Godme now has 7.5 hectares of over 70 micro-parcels in five villages in the Montagne de Reims area : Verzy, Verzenay, Beaumont sur Vesle, Villers Marmery and Villedommange. The average vineyard age is 30 years, two parcels are over 60 years old. The vineyards of Verzenay are nestled between two small hills and have many different exposures. The Chardonnays are coming from Villers Marmery and the Pinot Meunier from Villedommange, both Premiers Crus.

In the cellar, Hugues uses a horizontal membrane press and gravity in transferring juice and wine from the press to the tanks, and sometimes to the barrels. This is part of his effort to minimize stressing the juices, in order to retain the freshest aromas. Cuvées are vinified in small enameled tanks, allowing him to work each parcel separately and respect the individuality of each terroir. Malolactic occurs naturally to varying degrees every vintage and it is only impeded by the temperature of the cellar. Hugues vinifies his best wines in barrel so as to get the benefits of micro-oxygenation but he never uses new barrels. He sources his barrels from Burgundy cooperages.

Hugues Rose is a rosé d'assemblage with around 15% of still red wine added. The blend is 65% Pinot Noir of which 15% is still red wine and 35% Chardonnay. The final blend is usually around 60% reserve wine from the previous four vintages. Dosage is 4 grams/liter.
