The current release of the Les Romaines Rosé is a blend of 92% Chardonnay from Grand Cru vineyards in Les Mesnil-sur-Oger and 8% Pinot Noir from Grand Cru vineyards in Bouzy. Winemaker, Pierre Amillet's vinification style is consistent across all of his wines. He uses a combination of neutral oak and stainless steel in order to preserve the minerality and focus that Chardonnay grown in chalk can have. This extra brut Champagne is bone dry on the palate with a creamy texture provided by the incredibly fine mousse. The wine is salmon-pink in color and shows a perfectly integrated amalgamation of strawberries, apple peel, and a minerality reminiscent of wet stone and oyster shells.
