Cabassaou is the lowest-altitude vineyard among Tempier’s single-site wines, situated on a steep, sheltered slope that traps heat and limits wind exposure. It is almost entirely planted to Mourvèdre, producing the most intense and structured wine of the three. The natural conditions lead to lower yields and higher concentration, resulting in a wine with deep complexity and extended aging potential. Cabassaou is often the most reserved in its youth but develops significant depth and character over time.
