Mignon’s unique approach to viticulture, referred to by us as the Mignon Method, combines natural practices including biodynamics, phytotherapy, homeopathy and geobiology. The grapes, sourced from premier Pinot Noir vineyards, undergo a gentle pressing to extract the purest juice. Fermentation takes place in large oak foudres, allowing for a slow and controlled development of flavors. The wine then ages on lees for an extended period, promoting autolysis and enhancing the overall texture and complexity - an iconic bottle from this Domaine highlighting the freshness they can capture.
