Founded in 2017 by Yoshihiro Sako, Den Sake Brewery is the first sake brewery in Oakland, California.
Brewed using Koshihikari rice grown in Sacramento without any fertilizer or pesticides, Den 90 has a silky texture with a gentle, savory finish. To bring forth the natural umami of this premium rice, we only milled the rice to 90%. Low temperature fermentation and use of a stronger koji fungus made this brew elegant yet savory at the same time.
