50% Pinot Meunier and 50% Pinot Noir come together in this vintage Champagne. The fruit comes from two parcels in two regions: one in the Boulard home village of Cormicy in the Massif de St. Thierry (far-north Montagne de Reims) and the other in the Vallée de la Marne. The hand-harvested bunches goes into the press but is not pressed--rather, the fruit macerates for about 12 hours to develop the rosé color and the juice is then drained off and vinified, hence the phrase "rosé de saignée." This bottle is light, playful and delicious offering a touch of red fruits matched with a fine bubbles.
